Ever have a day where nothing goes right, plans change multiple times, and your entire, previously “well planned” day goes to you-know-what? 🙋🏼♀️🙋🏼♀️🙋🏼♀️. Me yesterday!!!
I had my day planned and for once planned out a little “me time” that consisted of watching an episode of “Anne with and E” on Netflix (don’t judge me! I loved Anne of Green Gables as a book when I was growing up…🤦♀️” Also, some extra me time having a FaceTime coffee date with my friend/cousin catching up. Well… none of that happened. It ended up being a day with rides from practice falling through, a late pickup for another because of required after school activities (unplanned), all while zipping the 3rd to Hockey practice which is an hour away. After it all shook out I ended up with 1 hour to not only prepare dinner but get the kids to eat that dinner before whisking one off. I hate feeding them fast food (although they love it I’m sure) so I pulled off this. And they killed it. Another day with no leftovers, and another day with me losing hair. 💁♀️
This is a SUPER simple home made sauce with veggie based pasta (use regular, wheat, etc for your diet needs – or non diet needs!) and packaged chicken meatballs. Yeah, it’s not a hard recipe lol. But it’s better than McDonalds!
Olive Oil 1 Tbsp
uncooked onion(s) ⅓ cup(s), grated
garlic clove(s) 2 medium clove(s), grated
dried oregano ½ tsp
table salt ½ tsp
canned tomato paste 1 Tbsp
canned crushed tomatoes 28 oz, or whole tomatoes
- Heat oil in a large saucepan over medium heat. When oil shimmers, add onion; cook, stirring frequently, until onion is translucent, 2-3 minutes. Add garlic, oregano and salt; cook 1 minute. Add tomato paste; cook, stirring, 1 minute more.
- Add canned tomatoes (if whole, use your hands to crush them); bring to a boil. Reduce heat to low; simmer until sauce thickens, 5-10 minutes.
- While simmering the sauce, cook the pasta and chicken meatballs (We love Aidell’s!) according to package instructions.
- Serve by topping spaghetti with sauce and meatballs to taste.
