Easy Peasy Guacamole

The perfect addition to my Lit Salsa Verde Chicken Tostados

I used to buy Guacamole pre-made at the grocery. I always liked it and ate it weekly. Then I tried making it at home from fresh ingredients… game changer. I didn’t know what I was missing until that point. I will never go back! I don’t HATE the store bought…but after growing up with parents who always fed us fresh food from our garden, I just learned to love fresh vegetables. I get my love of cooking from my Mom actually, but that’s another post! I’m going to feature my top recipes my own mom made when we were growing up soon – so stayed tuned!

As I stated in the previous post,this goes amazing with the Lit Salsa Verde Chicken! It’s also amazing on its own!

INGREDIENTS

1/4 cup finely minced onion $0.48

3 ripe Haas avocados $4.17

1 1/2 tablespoons fresh lime juice (or lemon juice) $0.49

1 large Plum or Roma tomato, deseeded and diced $0.63

1/4 cup cilantro leaves and tender stems, chopped $1.49 (if you are making with the Salsa Verde Chicken, just use the bunch you bought and don’t double count the cost :))

1/2 teaspoon ground cumin, optional

1/2 teaspoon salt, or more to taste

1 to 2 teaspoons minced jalapeño or serrano pepper, with seeds and membrane removed, optional ( I leave the seeds, we like spicy!)

INSTRUCTIONS

Add diced onion to a small bowl then cover with warm water, set aside for 5 minutes then drain. This “de-flames” the onions, making them less intense.

Cut avocados in half, lengthwise and remove the pit. Scoop out the flesh and add to a bowl.

Add lime juice then use a fork to mash until creamy, but still chunky.

Stir in the tomato, cilantro, cumin, drained de-flamed onions, salt, and diced peppers (if using).

Taste the guacamole and adjust with additional salt, peppers, or lime juice. Serve immediately or cover with plastic wrap by pushing the plastic wrap down onto the guacamole and refrigerate up to one day.

See?? As my dad always says “Easy Peasy Lemon Squeezy!”
